Coconut Curried Chickpea soup and Naan Bread







This meal took a little more effort and planning. But with two sisters working together, it was ready in no time. After embarking on a lifestyle of added fiber, my sister and I discovered that chickpeas have 12g of fiber in one cup. We were craving Indian food so we set out to make Coconut Curried Chickpea soup minus the Vegan - we added shredded chicken. Another change we made was adding spinach instead of collard greens. But after we had begun to cook we discovered that we didn't have garam masala - a must needed blend of Indian spices. So we looked it up real quick and found an easy recipe. Finally, my sister made whole wheat naan bread. It called for maple syrup but she substituted honey instead and to make it signature, added garlic and cheese to some of them. The beauty of experiment! This meal took about 1 hr.
