Healthy & Satisfying - Meal in a pinch!

Yesterday I made a pot of beans while occupying myself outside the kitchen. I had some leftover barley made, so today when we got home from church, I mixed the barley and the beans and let them simmer in a pot. Meanwhile I took some tilapia and salmon out of the freezer to start defrosting. A couple minutes later I had our salads prepared - spring mix, mushrooms, tomatoes, shredded cheese and sunflowers seeds. By then the fish was defrosted so I heated some olive oil and threw in some already chopped up garlic to sautee. I seasoned the fish with my mom's classic way - honey, balsamic vinegar and salt and pepper to taste. I threw them in the skillet to cook. This low-glycemic hearty meal took about 20 min to prepare, and didn't require hardly any thought beforehand. It was so satisfying that we didn't even miss the normal carb-filled, high glycemic extras. (like bread and what-not). Red beans - 1/4 cup contains 16g of fiber; pearl barley - 1/4 cup contains 8g of fiber and is a good substitute for white rice. My husband's response to this meal was, "Wow this is awesome".
