Pretty much every time we travel to Honduras we stop at a delicious restaurant in El Progresso. Our goal is to get fried fish every time (since it is not very fresh in Guatemala City) but they don't always have it. They do however have delicious Honduran food that we constantly crave. Last time we went we got chicken. It was served with a cheesy pasta salad. OHH! And I realized that it was the SAME pasta salad that I had recently eaten at a get-together at school. A Honduran lady from Tegucigalpa had made it and it was a big hit with everyone.
So I decided to try making it myself. And it has all of the sudden become part of our regular meals.
